This mobile holding and proofing cabinet is designed to safely maintain cooked foods at proper temperatures for commercial kitchen use. The rugged anodized aluminum cabinet features a clear front window and right-hinged door for monitoring and accessing foods. Four 5-inch casters provide mobility and stability, with front casters having brakes. The spacious interior holds up to 35 full-size pans. Pan guides securely hold pans in place during transport. Independent heat and humidity controls allow fine-tuning of the holding environment. Forced air circulation distributes heat and moisture evenly. Condensation is collected in drip troughs, with water held in an internal pan. An overcurrent-protected control panel includes manual controls and a digital thermometer for accurate temperature regulation.
